This lot excels as a medium roast, where the fruit-forward acidity and chocolate body are most pronounced. Lighter profiles will emphasise the apple notes, while darker roasts bring out caramel and deeper cocoa flavours.

From Origin

The Story Behind This Lot

The Region

The Caranavi province sits in the heart of the Yungas valley, where subtropical forests meet the Andes. This unique microclimate, combined with volcanic soil, creates ideal growing conditions for specialty arabica.

The Producers

This lot comes from smallholder farmers within the Aprocafe cooperative. Each family tends their own plots, typically between 2-5 hectares, using traditional shade-growing techniques passed down through generations.

The Harvest

Cherries are hand-picked at peak ripeness between May and September. After depulping and fermenting, beans are washed clean and laid on raised beds to dry slowly in the mountain sun over 15-20 days.
